ORANGE OR PINEAPPLE CAKE
These are two of David's favorite cakes. You make them both the same way which is why I keep them in the same recipe. These are very moist cakes and need no frosting!
1 box yellow cake mix
powdered sugar
***Orange***
2 small cans mandarin oranges, reserve juice
1 teaspoon orange extract
***Pineapple***
1 large can crushed pineapple, reserve juice
1 teaspoon pineapple extract
Mix cake according to box directions, except make these substitutions. Use the reserved fruit juice
instead of the water, but add water if necessary to make the correct amount and add the extract.
Spread drained fruit on bottom of 13 x 9-inch pan and top with cake batter. Bake at 350* until done.
Mix remaining fruit juice, if any, with enough powdered sugar to make a thin glaze. If you don't have
any fruit juice left just use milk. While cake is still hot, poke holes all over top with fork and drizzle glaze
over. Once it soaks in the cake will be very moist!
