MANDARIN ORANGE CAKE
a lightened up version of David's favorite Orange Cake
1 box sugar free yellow cake mix
3 eggs
1/2 cup unsweetened applesauce
1 cup fruit juice/water
1 teaspoon orange extract
2 small (11 ounce) cans mandarin oranges, juice reserved
up to 8 tablespoons powdered sugar
Mix cake according to box directions, except make these substitutions. Use the reserved fruit juice instead of the water*, but add water if necessary to make the 1 cup amount, add the extract and use applesauce instead of oil. Spread drained fruit on bottom of sprayed 13 x 9-inch pan and top with cake batter. Bake at 350* until done (according to box directions).
Mix about 4 - 5 tablespoons powdered sugar with just enough remaining fruit juice to make a medium thick glaze, almost like cough syrup. While cake is still hot, poke holes all over top with fork and spoon glaze over the entire surface even the edges. Once it soaks in the cake will be very moist! Makes 15 servings.
1 serving Blue & Purple (4) Green (5)
*If there won't be enough reserved fruit juice to make the glaze after measuring out the 1 cup for the cake then leave a few tablespoons out and fill the 1 cup measure with water.
