PINEAPPLE CUPCAKES
Lightened up version of my Pineapple Cake

1 box sugar free yellow cake mix
1/2 cup unsweetened applesauce
3 eggs
20 ounces crushed pineapple, juice reserved
2 teaspoons pineapple extract
12 teaspoons brown sugar

Drain pineapple and save juice.  Add enough water to juice, if needed,  to make 1 cup liquid.  Then mix
all remaining ingredients except brown sugar.  Fill cupcake tins and spray really well or use sprayed silicone
liners. Sprinkle each top with 1/2 teaspoon brown sugar.   Bake at 350 for 15 - 20 minutes or until done. 
Makes 24 cupcakes.  Leftovers freeze very well.  I wrap each one individually in plastic wrap or place in
a fold-top sandwich bag then store them all in a gallon size freezer bag.
