SHRIMP TACO BOWLS
1 pound medium shrimp, fresh or frozen
taco seasoning or choice or my Homemade Taco Seasoning
2 cups cooked rice
1 can black beans, drained and cooked
1 can corn, cooked
chopped red onion
chopped tomato
1 lime
1/2 cup Velveeta Shreds, original
Cilantro Yogurt Sauce (recipe below)
avocado mash, optional
If shrimp is frozen thaw and let drain in a colander while you're getting everything else together. To cook shrimp dry well using kitchen towels or paper towels and place in a bowl. Toss with taco seasoning to taste. Heat pan over medium-high heat and add about a tablespoon oil. Add shrimp and stir until almost completely cooked if making this for meal prep. It will be cooked the rest of the way when you reheat it in the microwave. If eating right away cook thoroughly. The shrimp should be curled and opaque. To assemble bowls start on the bottom with 1/2 cup rice then evenly divide the beans and corn over the four servings. Add onions and tomatoes to taste along with 1/8 cup cheese per serving. Cut lime into 4 wedges and use one wedge per serving. Serve with cilantro yogurt sauce and avocado mash. Makes 4 servings.

CILANTRO YOGURT SAUCE
1 cup nonfat plain Greek yogurt
chopped fresh cilantro, to taste
1 clove minced garlic
salt and pepper, to taste
Mix all together and store in fridge. Makes 4 servings.
