SCALLOPED POTATOES & ONIONS
1 can Healthy Request cream of celery soup or 1 batch of Homemade Cream Soup Mix, or other cream soup flavor
1/2 soup can skim milk
pepper
4 medium potatoes, peeled and sliced kind of thin
1 small onion, sliced
salt
3 tablespoons I Can't Believe It's Not Butter Light, or butter of choice
Mix soup, milk and pepper to taste and set aside. In a greased 1 1/2 - 2 quart baking dish layer half the potatoes topped
with half the onions. Season with salt. Pour half the soup mixture over the top and repeat layers ending with soup mixture.
Dot with butter. Cover and bake at 400 for 1 hour. Remove cover and bake another 10 - 15 minutes or until top is starting
to brown. Makes 6 servings.
