KETO PUMPKIN CREAM CHEESE MUFFINS

1/4 cup butter at room temperature
3/4 cup sweetener of choice, I used Lakanto monkfruit classic
2 eggs
1 cup pumpkin
1 teaspoon vanilla
2 cups almond flour
2 teaspoons pumpkin pie spice or my homemade version
1 teaspoon baking soda
1/4 teaspoon salt
Cream Cheese Filling
6 ounces cream cheese at room temperature
4 tablespoons powdered sweetener of choice, I used Lakanto monkfruit powdered
1 teaspoon vanilla
Using an electric mixer beat together the cream cheese filling ingredients until very smooth and set aside.
For the muffins also use an electric mixer and beat together butter and sweetener until completely mixed together.
Beat in eggs, pumpkin and vanilla. Add remaining ingredients and stir together until combined. No need for
the mixer. In a sprayed or lined muffin pan put half the batter in the bottom of each well, top evenly with the
cream cheese filling and then top with remaining half of the batter. Bake at 350 for 25 minutes. Cool slightly
before removing from the pan. Makes 12.
