CINNAMON PISTACHIO BREAD
3 tablespoons sugar
1 1/2 teaspoons cinnamon
1 box sugar free yellow cake mix
1 small box sugar free pistachio pudding mix
4 eggs
1/4 cup unsweetened applesauce
2 tablespoons water
1 cup nonfat plain Greek yogurt
24 grams chopped pecans
Spray or grease 2 loaf pans very well.* I used 9 x 5 pans. Mix together sugar and cinnamon and evenly divide between the two pans and sprinkle all over the bottom. Set aside. Make batter by mixing cake and pudding mixes, eggs, applesauce, water and yogurt. Mix with electric mixer until combined. Fold in pecans. Divide evenly into both pans. Bake at 350 for 40 minutes. Makes 2 loaves for a total of 16 servings.
