CHICKEN RICE CASSEROLE
1 1/2 cups cooked rice, brown or white
salt & pepper, to taste
1/2 teaspoon dried parsley
1 can Healthy Request cream of mushroom soup or a batch of my Homemade Cream Soup Mix
1/2 soup can skim milk
2 cups cooked, chopped chicken
Stir seasonings into rice then mix in soup and milk until combined. Stir in chicken. Baked in a greased 2-quart casserole dish at 350 for 30 minutes. Makes 6 servings.
