CHICKEN CASSEROLE
1 can cream of mushroom or chicken soup or my Homemade Cream Soup Mix*
1/2 can milk
8 ounces sour cream
2 cups chopped cooked chicken or more to taste
1 -2 cups shredded cheddar cheese
chopped onion to taste, optional
1 box chicken stuffing mix
Mix together everything except stuffing and set aside. Prepare stuffing according to package directions, Scatter half on bottom of a greased 9 x 13 inch baking dish. Top with all the chicken mixture and then remaining stuffing. Baked, uncovered, at 350 for 30 minutes or until bubbly and heated through.
You can also add one bag of cooked frozen broccoli to the mixture if desired.
*If using my homemade mix omit the half can of milk.
