BROCCOLI & HAM ALFREDO POTATOES
6 potatoes, baked*
1/2 teaspoon garlic powder
salt & pepper to taste
2 tablespoons skim milk
4 ounces cooked, cubed ham
handful chopped onion
6 ounces broccoli, cooked and drained (half a microwave steamable bag)
1 jar Alfredo sauce
2 ounces shredded cheese (I used Cabot Light cheddar)
Saute ham and onions together just to lightly brown the ham; set aside. Weigh potatoes before scooping them out and
put the total number of ounces in your recipe builder. Cut potatoes in half down the widest side and scoop pulp into a
medium sized bowl. Season with salt, pepper and garlic powder and stir. Pour 1/3 - 1/2 of the Alfredo sauce into the potatoes
and mix well. Stir in ham and broccoli. Add milk if needed to smooth out the consistency. Evenly spoon filling into the potato
shells. Pour remaining sauce over each potato and sprinkle evenly with cheese. Bake at 400 for 20 minutes or until heated
through and cheese has melted. Makes 6 servings.
