WHITE CHOCOLATE CHERRY PARFAITS
1 cup Trader Joe's Pitted Sweet Dark Cherries
1 tablespoon Trader Joe's Organic Reduced Sugar Cherry Preserves
1 cup nonfat plain Green yogurt
1/3 package, 9 grams, Jello White Chocolate pudding mix*
2 teaspoons monkfruit sweetener, or your choice
46 grams sugar free Cool Whip, or the type you prefer
fat free Reddi Wip
Hershey's Cookies and Cream candy bar, up to 25 grams
Put the preserves in a small pot and begin to melt over medium-low heat. While this is cooking cut frozen cherries into quarters and fill up a one cup measure. When preserves are melted add cherries and cook over medium-low heat until they are softened, but not mushy, and have made some liquid. Remove from heat and place in a shallow bowl. Let cool completely. You can put it in the freezer or fridge to speed up the cooling process. While the cherries are cooling make the cream. Place yogurt, pudding, and sweetener in a medium bowl and whisk until completely smooth. The add in the Cool Whip.
This makes enough for 2 parfaits so split the ingredients evenly between them. Layer starting with cream on the bottom, then cherries, more cream and the rest of the cherries. Add a dollop of Reddi Wip to the top and grate or shave up to 25 grams of candy bar on the top of each one. Finish off with a little drizzle of any cherry juice left in the bowl.

*You can also make it Cherry Vanilla by using vanilla pudding and adding a teaspoon of vanilla extract to the cream mixture.
