WHITE BEAN & COUNTRY HAM SOUP
2 tablespoons oil
1 cup diced country ham
1 cup diced onion
1 cup diced celery
1 cup diced carrots
1 can chicken broth
3 cups water
2 can cannellini beans, drained and rinsed
1 teaspoon dried parsley
1/4 teaspoon ground sage
1/2 teaspoon salt
Heat oil in a heavy dutch oven. Add ham, onions, celery and carrots. Cook until vegetables have started to get tender.
Add chicken broth and scrape up any browned bits off the bottom. Add water and cook until vegetables are completely
tender. Then add about 1/3 of the whole beans and mash the rest of them. Add mashed beans and seasonings and cook
10 minutes. Makes 4 servings of about 2 cups each.
