VEGETABLE STUFFED POTATOES
1 large or 4 medium potatoes
1 carrot, peeled and diced small
1 cup fresh broccoli, chopped small
1/2 cup chopped onion
4 cloves minced garlic
salt & pepper, to taste
1/2 cup nonfat plain Greek yogurt
2 tablespoons grated Parmesan cheese
1/4 cup chopped fresh parsley
Baked potatoes in your preferred method. While potatoes are cooking pour a tad bit of oil into a frying pan
and add carrots, broccoli, onion and garlic. Stir to coat, cover and cook over medium heat until the broccoli
and carrots are tender; set aside. When potatoes are done cut them in half and once cool enough to handle
scoop out insides and place into a large bowl. Leave a small amount of potato on skin. Mash potato to
break up then add the yogurt and stir. Add the vegetables, cheese, parsley and salt and pepper. Stir to
combine really well. Stuff the filling into each of the potato shells. Place on a baking sheet and bake at
350 degrees for 15 mins.
