VEGETABLE BEEF CHILI
1 pound ground beef
2 stalks celery
2 medium carrots
1 medium onion
1 small green bell pepper
1 small red bell pepper
2 cloves minced garlic
2 can diced tomatoes, undrained
1 can corn, drained
1 can beef broth
1/3 cup sugar free ketchup
Put a couple tablespoons of oil in a hot dutch oven and add the ground beef. Chop all the vegetables a bit
small and add to the beef. Cook until the vegetables are soft. You can cover it to help steam them if you want.
Once done to your liking pour just a little bit of beef broth into pot and scrape up any brown bits from the bottom
then add the remaining beef broth. Add the tomatoes and corn and cook about 30 minutes or more until the
liquid starts to cook down. If it's not thick enough for you you may choose to use xanthan gum or cornstarch
and water. If using xanthan gum sprinkle with 1/2 teaspoon and stir well. If you need to add another 1/2 teaspoon.
Once thick as desired add ketchup. Makes 8 servings.
