TWICE BAKED STUFFED SWEET POTATOES
2 small sweet potatoes
2 tablespoons sour cream
2 tablespoons brown sugar or brown sugar substitute
1/4 teaspoon cinnamon
chopped pecans
your choice of molasses, honey, maple syrup, pancake syrup, etc
Bake sweet potatoes until very soft. Allow to cool enough to handle. Cut potatoes in half lengthwise and
scoop insides into a bowl leaving a small amount of potato on the shell. Place potato shells on a baking sheet;
set aside. Mash potatoes with a fork to smooth them out then add sour cream, brown sugar and cinnamon.
Stir together until completely combined and very smooth. Divide evenly between the potato shells and smooth
down. Bake at 350 degrees for 20 minutes. Top with chopped pecans and drizzle with your choice of syrups.
Serve while still warm. Makes 2 servings.
