TWICE BAKED POTATO CASSEROLE
2 pounds potatoes, about 4 medium
House Seasoning, or seasoning of choice
8 slices Hormel Fully Cooked Bacon, cooked and crumbled
1 cup fat free sour cream
4 ounces Cabot 75% Less Fat Cheddar cheese, shredded
Bake potatoes any way you like, cool and cut, unpeeled, into bite sized cubes. Spread half in the bottom of a square baking dish that has been sprayed with cooking spray. Season liberally with House Seasoning then sprinkle with half the bacon, half the sour cream and half the cheese in that order. Repeat layers exactly the same. Bake uncovered at 375 for 30 - 35 minutes or until cheese is melted. Makes 8 servings.
