TWICE BAKED CAULIFLOWER CASSEROLE
1 head of fresh cauliflower or 2 bags of frozen1/2
1/2 cup plain nonfat Greek yogurt
2 tablespoons grated Parmesan cheese
3/4 cup shredded reduced fat cheddar cheese
1/2 cup chopped green onion
salt & pepper to taste
2 teaspoon dried parsley
Prepare your chosen type of cauliflower and cook until very soft; drain. Place cooked cauliflower in a food processor
and add Parmesan cheese, yogurt, salt, pepper and parsley. Pulse until it becomes a whipped/mashed consistency of
mashed potatoes or as close as you can get. It is okay if there is still a little bit of texture to the cauliflower.
Stir in green onions and 1/4 cup of the cheese. Place mashed cauliflower in a greased casserole dish. Top with the
remaining cheese. Bake for 15 minutes at 350 or until cheese is melted. Makes 4 to 6 servings.
