TOMATO BASIL SOUP
adapted from a Nutrisystem recipe
1 large onion, chopped
2 tablespoons minced garlic
2 can diced tomatoes
4 cups low sodium chicken broth
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried marjoram
1/4 cup fresh basil*
Preheat a large stockpot and spray with cooking spray. Add the onions and garlic and cook for 5 - 7 minutes or
until onions start to turn translucent. If necessary add just a little of the chicken broth to scape up any brown
bits from the bottom. Then add the rest of the chicken broth and the remaining ingredients except the basil.
Bring to a boil and then turn the heat down and simmer for 30 minutes. Add the basil and continue to simmer
20 more minutes. Remove from heat and let cool at least 30 minutes. Use either an immersion blender,
regular blender or food processor to blend to desired consistency. Makes approximately 5 cups.
*You can also use the partially dried basil but only use 2 tablespoons.
