TOMATO & ONION JAM
1 red onion
1 roma tomato, diced small
3 tablespoons balsamic vinegar
1 teaspoon sugar
Peel and cut onion in half and slice very thinly. Break onion slices apart and add to frying pan with a little drizzle of oil. Cook slowly over medium heat, stirring frequently, until very soft. Add diced tomato, vinegar and sugar. Stir to combine then cook over medium heat, again stirring frequently, until it becomes the consistency of jam. I use this as a hamburger topping.
The serving size will depend on how much you want to use. As far as the points go the vinegar is 2 points and the sugar is 1 point. I personally do not count any vinegars so for me the total recipe is 1 point, but you calculate this the way you want to.
