THE ORIGINAL CLEOCHATRA'S OOPSIE ROLLS
3 eggs, separated
1/8 teaspoon cream of tartar
3 ounces cream cheese, cold and not softened
Separate the eggs being careful not to get any egg yolk into the whites or they will not stiffen up. With an electric mixer beat egg whites and cream of tartar until stiff peaks form. Set aside. In a separate bowl using the electric mixer (it's ok to use the same beaters without cleaning them) beat the egg yolks and the cream cheese, which has been cut into smaller pieces for easier mixing, until as incorporated as can be. Some remaining small chunks of cream cheese will remain and that's perfectly ok. Divide into 6 even mounds on a parchment paper lined baking sheet and bake at 300 degrees for 30 minutes. Do not overbake or they will get crumbly. These do not have a flavor profile on their own so feel free to add spices and seasonings and add them in with the egg yolks. Let cool a few minutes on the baking sheet then transfer to a cooling rack to cool completely before storing. Store loosely in a paper bag on the counter for up to 3 days. Makes 6.
