6 large baking potatoes, baked
1 pound hamburger (I used 96% lean)
1 package taco seasoning mix
1 teaspoon chili powder
1 cup salsa
1 - 2 cans kidney beans, rinsed or 2 cups cooked from dried, rinsed
Toppings: shredded cheese, sour cream, avocado, etc.

Brown hamburger; drain if necessary. Add seasonings and salsa and stir to combine.  Add beans and heat through for about 5 minutes.  Serve over baked potatoes and add toppings as desired.

​Makes 6 servings.  The serving size will depend on the total amount of hamburger mixture you end up with. Mine ended up being 4 cups total for a serving size of 2/3. On Blue & Purple (2) Green (4) Then, of course, count the points for your potato and toppings.
