SWEET POTATO & APPLE BAKE

17 ounces peeled and cubed sweet potatoes
1 large apple or 2 medium, unpeeled and cubed
3 tablespoons Lakanto Golden Blend sugar substitute
1/2 teaspoon cinnamon
dash salt
dash nutmeg
2 tablespoons Country Crock Light
Place cubed potatoes and apples into a sprayed 2-quart casserole dish. Mix dry seasonings together
and sprinkle over top. Dot with butter spread. Cover and bake at 350 for about 50 minutes or until tender.
You may sprinkle with more sugar substitute if desired when serving. *You can use regular brown sugar or
another brown sugar substitute just be sure to adjust the points. Also be sure to adjust your recipe for the
actual number of ounces of potatoes you use (weigh them after peeling). Makes 3 cups or 6- 1/2 cup servings.
