SUMMER SQUASH & CHICKEN BAKE
1 pound ground chicken breast
1 1/2 pounds yellow squash, diced
1 onion, chopped
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
SAUCE
2 cups skim milk
1/4 teaspoon salt
1/4 cup Wondra instant flour
6 ounces reduced fat shredded cheddar cheese
In a large frying pan cook together the chicken, squash, onion, salt, pepper and thyme. Cook until chicken is
done and squash is tender, about 15 minutes. If you have any liquid in the pan turn your heat up to high and
carefully cook until all the liquid has evaporated. Remove from heat and pour into a sprayed 11 x 7 inch
baking dish; set aside. To make the sauce add the milk and sauce to a medium size pot. Heat to a simmer.
Sprinkle in a little bit of the flour in at a time, whisking a minute or so before adding the next bit of flour.
By the time you use up all the flour your milk will be slightly thickened. Add the cheese and whisk until
smooth. Pour the cheese sauce over top of the squash and chicken. Bake at 350 for 30 minutes.
Makes 6 servings. 5 PP for me.
