SUMMER BAKED SQUASH
3 cups sliced yellow squash
2 tablespoons water
1/2 cup chopped onion
1/2 cup mayonnaise
2/3 cup shredded cheddar cheese, divided
1/2 teaspoon sugar
1/2 teaspoon salt
pepper, to taste
Place squash in a microwave safe bowl with the water, cover and cook 4 to 5 minutes until just tender. Drain well and add 1/3 cup cheese, sugar, salt and pepper. Stir well. Pour into a greased, shallow 1 1/2 quart baking dish. Cover and bake at 350 for 25 minutes. Remove cover, sprinkle with remaining cheese and bake, uncovered, another 5 minutes until cheese is melted. Let cool a little before serving. The mayonnaise will separate during baking leaving some oil in the bottom of the dish so serve with a slotted spoon. The solid part of the casserole is delicious. The recipe has not been made with low fat mayo so I'm not sure if that would make a difference. Makes 6 servings.
