STRAWBERRY MOUSSE
4 cups cleaned and quartered strawberries
1/2 cup -0 point- sweetener of choice ( I used half monkfruit and half stevia)
1 small box sugar free instant vanilla pudding mix
8 ounces whipped topping*, thawed
Combine strawberries and sweeteners in a food processor or blender and process until very smooth. Add in pudding mix and again process until smooth. Transfer to a large bowl and stir in whipped topping until it's fully incorporated. Store in the refrigerator until time to serve. Makes 8 2/3-cup servings. Points are the same for all three plans.
*Points will be determined by the type of whipped topping you use. For example, using fat free Cool Whip makes it 2 points per serving, but Food Lion Lite makes it 4!
