STRAWBERRY LEMON CHEESECAKE
3 cups nonfat plain Greek yogurt
1 box sugar free cheesecake pudding mix
2 tablespoons sugar free lemon pudding mix*
76 grams sugar free Cool Whip
1 - 2 pounds strawberries
sugar substitute of choice, to taste
3 full sheets graham crackers, 2 small squares per cheesecake (your points will vary based on your brand)
Start ahead of time by dicing the strawberries and mixing them with sweetener of choice to taste. Allow to sit until juices are released.
Whisk together yogurt, pudding mixes and Cool Whip until smooth and well blended. In 12 ounce start making layers by crushing the graham crackers in the bottom. Layer yogurt next using approximately 1/2 cup yogurt total per jar. Then using a slotted spoon add strawberries. Repeat the yogurt and strawberry layers one more time. Cover and store in fridge. Makes 6.
