STOVETOP SESAME CHICKEN
1 - 2 pounds chicken breast cut into bite sized cubes
1/4 cup oil
1/4 cup soy sauce
1/4 cup white grape juice
1/2 teaspoon ground mustard
1/4 teaspoon ground ginger, heaping
black pepper to taste
splash sesame oil
2 tablespoons brown sugar substitute
chopped green onions
sesame seeds
In a gallon size plastic bag add oil, soy sauce, grape juice, ginger, mustard, pepper and sesame oil. Squish the bag around
to combine the ingredients. Add the chicken and squish around to coat it all. Zip closed and let marinate in the refrigerator
for a full 6 to 8 hours, turning the bag over several times. To cook heat a large frying pan and add a bit of oil. Put about half
the chicken in the pan, shaking off excess marinade. Stir around and cook until it's completely done. Remove to a bowl and
repeat with the other half of chicken. Remove chicken to same bowl. Add leftover marinade to the pan, add brown sugar substitute
and boil for a full 5 minutes to kill off any bacteria from the chicken. Add the chicken back to the pan and stir around to coat.
To serve sprinkle with green onions and sesame seeds.
I serve it over rice and with some cooked broccoli.
