SPINACH & PROSCUITTO FRITTA

8 eggs
6 ounces spinach , roughly chopped
3 ounces prosciutto, chopped
3/4 cup grated parmesan cheese 
1/2 cup heavy whipping cream
1 tablespoon olive oil
salt & pepper, to taste

In a pan or pot with high sides brown prosciutto in oil until just starting to crisp up. Remove from pan and set aside.  To same pan add the chopped spinach and saute until as tender as you like it.  Add a bit more oil if needed.  In the meantime beat together eggs, whipping cream and salt and pepper; add half the cheese.  When spinach is done add it along with the prosciutto to the egg mixture.  Pour into a sprayed 9 x 9 inch baking dish and top with other half of cheese.  Bake at 400 for 20 minutes or until just set in the center.  Let cool slightly before cutting.  Makes 4 servings.
