SOUTHERN FRIED CHEESY BACON GRITS

1 1/2 cups quick grits
4 cups water
salt to taste
4 tablespoons light butter
4 ounces shredded Cabot 75% light cheddar cheese
8 slices Great Value fully cooked bacon, cooked and crumbled

Bring water to a full rolling boil and slowly stir in grits.  Reduce heat and cook, stirring frequently, 5 or 6 minutes until thickened.  Remove from heat and stir in butter until melted.  Then stir in cheese until it's melted.  Finally stir in bacon.  Pour into a greased loaf pan, cover with a paper towel and then plastic wrap or foil overnight. The next morning unmold the grits and slice into 8 pieces.  Each piece is one serving but before frying slice it into 2 thinner pieces.  To fry coat each side in a small amount of flour (1 teaspoon is 0 points).  Spray hot pan with olive oil and fry until the bottom is golden brown.  Before flipping spray the top with olive oil to keep the flour from having dry spots.  It will take probably 15 minutes or so so get a nice crust on both sides and make sure the insides are good and hot. Store leftover grits in the refrigerator until needed.  Makes 8 servings.
