SNICKERDOODLE TRUFFLES

2 cups almond flour
1/2 cup powdered monkfruit or powdered sweetener of choice
1 teaspoon cream of tartar
1 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons butter, melted
1 teaspoon vanilla
3 tablespoons granulated monkfruit or granulated sweetener of choice
1 tablespoon cinnamon.
In a large bowl whisk together the dry ingredients. If your powdered sweetener is lumpy you may want
to sift it but I found that in the end it dissolved in just fine. Then add the butter and vanilla. Mix together
with a spatula until most of the dry ingredients are incorporated then with your hand knead into a dough
that sticks together gathering up all the dry bits. Make one test ball to see if it will hold its shape. If not a
dd 1 teaspoon of water and try again. Do not add more than 1 teaspoon at a time if needed. Make into
small balls. Mix the granulated sweetener and cinnamon together and roll each ball in it while still moist.
Any remaining cinnamon sugar can be sifted into a container for later use. Be sure to sift to remove any truffle bits.
Store in an airtight container at room temperature. Makes approximately 20 - 21 truffles.
