SLOPPY JOE CASSEROLE
(I updated the recipe a little from the video)
1 pound ground meat of choice
-----------Make one recipe of your favorite sloppy joes that uses one pound of ground meat. You can use canned, spice packet or homemade.*
2 cups elbow macaroni, cooked and drained
16 ounces frozen corn, unthawed
2 cups shredded cheese of choice
Mix sloppy joes, macaroni, corn and most all of the cheese and pour into a greased 2-quart casserole dish. Stir well and add about 1/2 cup water if needed to moisten it up a bit. Sprinkle with remaining cheese. Bake uncovered at 350 for 30 minutes or until cheese on top is melted. Makes 8 servings.
I am not including the points because they will be determined by your choice of meat and cheese. Also if you're on Purple you don't need to count the macaroni if using whole wheat.
*This casserole will only be as good as the sloppy joes you make it with. I wasn't a fan of this particular packet mix so I will use my homemade recipe the next time. I would also cut it in half because it makes a huge casserole dish full. I would go ahead and make the full one pound's worth of sloppy joes but free half for later.
