SIMPLY FILLING CORNBREAD
1 cup plain cornmeal, not cornmeal mix
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup granulated sweetener, I used Truvia Sweet Complete
2/3 cup plain, fat free yogurt
1/2 fat free sour cream, I used light
1 egg
In a small bowl mix cornmeal, baking powder, baking soda and salt; set aside. In a larger bowl whisk
together yogurt, sour cream, egg and sweetener until well combined. Add dry ingredients and stir
together well. Pour into a 6 inch cast iron pan which has been spritzed with oil. You can try an 8
inch pan or baking dish but the cornbread will be thinner. Bake at 375 for about 20 minutes
or until the edges begin to get brown and a toothpick in the center comes out clean.
