SIMPLY FILLING BREAKFAST CASSEROLE
16 ounces frozen shredded hashbrowns
1 onion chopped, or to taste
1 red bell pepper chopped, or to taste
chopped Canadian Bacon, optional
1 cup frozen corn kernels
5 eggs
1 cup skim milk
salt and pepper to taste
4 ounces fat free cheddar cheese
In a large bowl mix together the hashbrowns, onion, pepper, bacon, corn and set aside. In a smaller bowl
beat together the eggs, milk salt and pepper and pour into the hashbrown mixture and stir around. Add
the cheese and stir together until it is well combined, Pour into a greased 9 x 13 inch baking dish.
Bake at 350 for 45 minutes or until set in the middle. Makes 6 servings.
