SHEET PAN CUBAN CHICKEN

1 1/2 pounds boneless skinless chicken breasts, cut into 1 inch cubes
2 tablespoons olive oil
2 tablespoons low sodium soy sauce
3 cloves garlic, minced
2 tablespoons fresh chopped oregano or 2 teaspoons dried
1 teaspoon ground cumin
zest of 1 orange and 2 tablespoons of the juice
zest and juice of 1 lime
salt and pepper, to taste
1 onion, thinly sliced
2 bell pepper, sliced ,any color
Place chicken in a medium bowl and add olive oil, soy sauce, garlic, oregano, cumin, orange juice + zest, and lime juice + zest. Season to taste with salt and pepper. Toss well to evenly coat the chicken. Add the onions and bell peppers and toss. Place on a foil lined baking sheet that has been coated with cooking spray. Arrange everything in a single, even layer. Bake at 425 for 17 -20 minutes or until chicken is cooked through; stir halfway. Servings will vary, but because I'm not counting the marinade and the rest of the ingredients are -0- point foods I'm not counting points for this. Green will, however, need to weigh out the chicken.
Serve over rice with black beans, corn, tomatoes, salsa, avocado or anything else you like.
