SHEET PAN CHICKEN PARMESAN
4 thin chicken breast cutlets
1/4 cup all purpose flour
1 egg
1/2 teaspoon garlic powder
salt to taste
1 cup plain panko breadcrumbs
3 tablespoons grated parmesan cheese
1 tablespoon olive or avocado oil
spaghetti sauce
shredded mozzarella cheese
Line a baking sheet with foil and spray with cooking spray. Set up breading station in three separate dishes.
In the first shallow dish put the flour. In the second shallow bowl beat together the egg, garlic powder and salt.
In the third shallow dish mix the panko with the parmesan cheese then stir in the 1 tablespoon oil until as evenly
distributed as possible. It will not be clumpy.
To coat the chicken dip both sides in flour, then in the egg mixture. Allow excess to drip off. Then roll both sides
in the panko mixture, patting in if necessary to get it to stick. Place on sprayed baking sheet and bake at 450 for
15 -20 minutes or until it is starting to brown and chicken is done. Remove from oven and set oven on broil. Rack
should be about 6 inches from the broiler. Top each chicken breast with desired amount of spaghetti sauce and
then top with cheese. Place under the broiler just long enough to melt the cheese and let it brown just a tad.
Serve with spaghetti and extra sauce. Makes 4 servings.
