SCRAMBLED EGG MUFFINS
8 ounces bulk breakfast sausage
1/2 cup chopped onions
1/2 cup shredded cheddar cheese
12 eggs
1/2 teaspoon salt
1/4 teaspoon garlic powder
Spray a 12-cup muffin pan with cooking spray and set aside. Cook sausage until done and evenly divide it
between the 12 muffin cups. Do the same with the onions and cheese. In a large mixing bowl, preferable with
a spout, whisk eggs, salt and garlic powder until fully combined. Pour evenly between the 12 muffin cups.
Bake at 350 for 20 minutes. Allow to cool in the pan for about 5 minutes before removing. You may use a
silicone spatula or butter knife to loosen the edges if need be.
