SAVORY FRENCH TOAST IN A MUG
2 eggs
salt & pepper, to taste
2 slices of bread, cubed
Additions:
chopped Canadian Bacon
chopped fresh spinach
shredded cheese
chopped onions
chopped bacon or bacon bits
cooked & crumbled sausage
any other meats or vegetables you like
Spray a large mug with cooking spray and add two eggs. Whip the eggs together with a fork along with
salt and pepper. Stir in the additions and then add the cubed bread. Push the bread down into the egg mixture
to fully coat. Microwave 1 minute then remove and with a fork stir around the bottom to help redistribute the
soaked bread a little bit. This step will help it cook more evenly. Microwave 45 seconds more. I do not recommend
cooking any longer than 1:45 because the bread on the top will begin to dry out. Let sit a couple minutes to finish
cooking before turning out onto a plate. Makes 1 serving.
The points in this dish are completely determined by the type of bread used as well as the individual additions.
On all plans it is possible to use zero points worth of additions and only have points in the bread, except
Green will add the points for the eggs.
