SAUSAGE BREAKFAST CASSEROLE

1 pound bulk breakfast sausage, cooked, crumbled and drained
16 ounces day old loaf bread, cubed
1 bunch green onions, sliced
1 cup shredded cheddar cheese
1 cup shredded swiss cheese
10 eggs, beaten
3 cups half and half*
1 teaspoon salt
Place bread cubes in a greased 9 x 13 inch baking dish. Top evenly with sausage, green onions, and both cheeses. In a large bowl whisk together eggs, half and half and salt until well combined. Pour over top of bread mixture trying to coat evenly. Mash bread and topping down into eggs if needed. Cover with plastic wrap or foil and refrigerate overnight. The next day bake at 350 for 50 - 60 minutes or until golden brown and set. Let cool slightly before cutting. Makes 8 servings.
*I feel certain you can substitute your favorite milk and have equally good results.
