SAUSAGE & GRITS CASSEROLE
1/2 cup uncooked grits, your choice of type
8 ounces bulk breakfast sausage
2 tablespoons butter
1 egg, beaten
4 ounces shredded cheddar cheese
Begin by cooking the grits and the sausage. Cook the sausage into crumbles and place into a large bowl.
When the grits are cooked add them to the sausage. Before stirring them into the sausage temper the egg.
To do this put a small amount of grits into the beaten egg and mix well. Put another small spoonfull into
the egg and mix well. Now add the butter to the grits and stir to melt then pour in the egg and mix well.
Stir in 1/2 of the cheese. Pour into a sprayed square baking dish. Bake at 350 for 50 minutes. Remove
from oven and sprinkle with remaining cheese. Return to the oven and bake 10 more minutes or until
chese has melted. Allow to sit about 5 minutes before serving. Makes 2 to4 servings.
