ROASTED PUMPKIN SEEDS

Scrape seeds out of pumpkin and rinse well in a colander.  Blot dry on a clean dish towel. Spread seeds onto a large sprayed baking sheet and spritz with a little oil spray. I use salt but season anyway you'd like.  Bake in a 375 degree oven for approximately 40 minutes.  I check and stir after the first 10 minutes and then every 5 minutes thereafter until they are done.  You want them lightly browned.  Watch carefully as they will burn quickly.  The last 10 minutes I like to check in increments of 3 and 2 minutes instead of 5 just to keep an eye on them.  Let cool and store in an air tight container.
