RICOTTA BAKE

1 egg, beaten
8 ounces ricotta cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
salt and pepper, to taste
1/2 cup spaghetti sauce
1/2 cup shredded mozzarella cheese

In a medium bowl beat the egg with a fork than add the ricotta, Parmesan, Italian seasoning and salt and pepper.
Mix until completely combined.  Pour into a greased 1 quart casserole dish.  Spread the spaghetti sauce evenly
over the top and sprinkle with mozzarella.  Bake at 450 for 20 - 25 minutes or just until the cheese is starting to melt.
Let cool before serving to give it time to set up.  Makes 2 to 4 servings.
