RICE PILAF
1/2 tablespoon butter
2 - 3 green onions, sliced
1 cup instant rice*
1 cup chicken broth
salt and pepper to taste, if needed
Melt butter in small saucepan and add onions. Cook until the onions are tender. Add rice and stir to
coat in the butter. Add chicken broth and bring to a full boil. Remove from heat, cover tightly and let sit
until the rice has absorbed the water and is tender. Makes 2 or 3 servings.
*if you use brown rice like I did be prepared to let it sit a bit longer than the white rice. Be sure to
cover it tightly.
