RICE BREAKFAST CEREAL
2 cups white rice, rinsed well and drained
2 cups unsweetened almond milk
2 cups water
3/4 teaspoon salt
1 1/2 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup raisins
Mix everything in a large pot and bring to a boil. Lower heat, cover and simmer about 20 minutes or until all the liquid is absorbed and rice is tender. Serve with sweetener and milk of choice. Makes 6 servings of 1 cup each.
