Ranch Hashbrown Casserole
4 cups shredded hashbrowns (0 point brand)
1 1/2 cup Great Value light sour cream
1/4 cup Hellman's Light mayonnaise
2 - 3 tbls Ranch dressing mix, or to taste
5 slices bacon, cooked & crumbled
6 green onions, chopped
1 cup shredded Cabot 75% Light cheddar cheese (or choice, just point it out)
Thaw hashbrowns or microwave about 2 minutes. Stir in the sour cream and mayo until well blended then add in the ranch dressing mix. Stir in cheese, bacon and onions. Spread into a greased 2 quart casserole and bake at 400 for about 40 minutes or until heated completely through.
Makes 6 servings.
