QUINOA CHILI

1 cup quinoa, uncooked*
1 tablespoon olive oil ( I don't count)
3 cloves minced garlic
1 onion, diced
2 (14.5-ounce) cans diced tomatoes
1 (15-ounce) can tomato sauce
1 (4.5-ounce) can diced green chilis
1 tablespoon chili powder, or to taste
2 teaspoons cumin
1 1/2 teaspoons paprika
garlic powder, to taste
onion powder, to taste
salt and pepper, to taste
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
1 1/2 cups corn kernels, frozen, canned or roasted
Cook quinoa using any method you like; set aside. See below how I made it in my instant pot. In a large Dutch oven sauté onions and garlic until softened. Add remaining ingredients including quinoa, cover and simmer about 30 minutes. Makes 9 cups my mistaken way on the video. 11 cups the correct way as written.

*I misread the recipe. It should be one cup uncooked quinoa cooked and then the cooked amount added to the chili. It makes approximately 3 cups cooked quinoa.
To make in the instant pot. Measure and rinse the quinoa under running water in a fine mesh strainer or sieve. Add to instant pot with 1 1/2 cups water or broth. I used an entire 14 ounce can of chicken broth and it came out perfect. Cook on high for 2 minutes. Let do a 10 minute natural release then fluff with a fork.
