PUMPKIN SPICE STUFFED FRENCH TOAST

2 slices bread of choice (I use Sara Lee Delightfuls)
Filling
2 tablespoons cream cheese (I used homemade fat free cream cheese from Recipes with Roy)
pinch pumpkin pie spice, to taste
sweetener of choice, to taste (I use Lakanto Monkfruit Classic)
Batter
1 egg
1/4 cup pumpkin
1/2 teaspoon pumpkin pie spice
sweetener of choice, to taste
For the filling mix cream cheese with pumpkin pie spice and sweetener until smooth and incorporated. Make a sandwich
with the 2 slices of bread and set aside. For the batter beat a egg in a square or other shallow dish that the sandwich will fit
into then beat in pumpkin, spice and sweetener. Place sandwich in batter and let soak for 1 minute. Turn over and let soak
another minute. Fry in heated pan that has been coated with cooking spray until golden brown on the bottom then flip and
cook the other side. Slice in half diagonally and serve with syrup and powdered sugar if desired. Makes 1 French toast.
*Points are completely dependent upon which type of bread and cream cheese you use. You can make this as low
or as high point as you like.
