Pumpkin Spice Oatmeal Muffins
1 1/2 cups of old fashioned oatmeal
1/2 tablespoon cinnamon
1/2 tablespoon pumpkin pie spice
1 tablespoon baking powder
1/4 teaspoon salt
4 tablespoons Lakanto Monkfruit Golden, or brown sugar substitute of choice to taste
1 egg
1/2 cup pumpkin
1 teaspoon vanilla extract
3/4 cup almond milk
Mix dry ingredients together in a bowl; set aside. Mix wet ingredients together in a bowl. Combine the wet and dry ingredients. Scoop into spray muffin tin. Bake at 350 for around 23 - 25 minutes or until a toothpick comes out clean. Makes 11 (Yours may vary depending on size)

Recipe makes 18 muffins. Great to eat for breakfast, as a dessert or just by themselves.
3 cups of old fashioned rolled oats
1 tbsp of ground cinnamon
1 tbsp of pumpkin pie spice
2 tbsp of baking powder
1/2 tsp of salt
2 tbsp light brown sugar
Wet ingredients:
2 beaten eggs
2 mashed bananas
1/2 tbsp of vanilla extract
1 1/2 cups of almond milk
Mix the everything together . Fill silicone muffin cups half way , cook in the air fryer on 350 for 11 mins.
