PUMPKIN PISTACHIO OVERNIGHT OATMEAL
1/2 cup old fashioned oatmeal
1 teaspoon chia seeds
2/3 cup unsweetened almond milk, or milk of choice
2 teaspoons Lakanto monkfruit, or sweetener of choice
1 teaspoon vanilla
2 tablespoons pumpkin
1/2 teaspoon pumpkin pie spice, or to taste
1 tablespoon pistachios
16 Lily's Pumpkin Spice chips
Mix oatmeal, chia seeds, milk, sweetener, pumpkin and vanilla and stir to mix. Adjust the sweetness level according to your tastes. This is not very sweet with just the two teaspoons of monkfruit. Top with pistachios and pumpkin spice chips. Store in fridge for up to 5 days. Eat cold or heat in the microwave for about a minute.
