PUMPKIN PISTACHIO ENERGY BALLS

½ cup raw pistachios, divided
¼ cup raw cashews
10 pitted Medjool dates
¼ cup canned pumpkin
Pinch salt
½ teaspoon pumpkin pie spice
½ teaspoon cinnamon, optional
½ teaspoon vanilla extract
Place ¼ cup pistachios in a food processor and process until they resemble coarse sand. Transfer to a small
bowl and set aside. Add cashews and remaining ¼ cup pistachios to the food processor and process until
finely ground. Add the dates, pumpkin, spices and vanilla extract and continue to process until ingredients
are combined and smooth. At this point, you may adjust spices, if desired.
Form into balls about the size of golf balls and roll each one in ground pistachios. I used a small cookie scoop
because it's very sticky. Store in the fridge. May also be frozen. Makes 9 - 10 balls.
