PUMPKIN BREAD
3 cups sugar
1 cup oil
1 can pumpkin
4 eggs, beaten
3 1/2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon cloves
2/3 cup water
Cream together sugar and oil. Add pumpkin and eggs. In a separate bowl mix together flour,
baking soda, salt, baking powder and spices. Add alternately with water to pumpkin mixture,
mixing well after each addition, Pour into greased and floured or sprayed loaf pans. Makes
2 to 4 loaves depending on the size of your pans. Bake at 350 for 1 hour or until toothpick
comes out clean near the center. You may freeze extra loaves by cooling completely then
wrapping tightly in plastic wrap and foil.
